Zaborin
Zaborin Ryokan is nestled within the deep forests of Niseko. Back in 2017, Zaborin received the highest possible rating (5 stars) in the Michelin Guide to Hokkaido's ryokan (inn) category.
The building combines warmth with modernity, and is highly regarded worldwide, attracting many fans for its architecture; in fact, it reached the final selection list at the 2016 World Architecture Festival in Germany. All 15 guest rooms are equipped with both an indoor bath and an open-air bath, with water pumped up from 1,000 meters underneath the facility. The cuisine served here is a form of Japanese cuisine called "Kita Kaiseki," and you can enjoy beautiful dishes prepared with carefully selected Hokkaido ingredients.
From inside the inn, you can enjoy beautiful vistas of Mt Yotei, which is nicknamed "Ezo Fuji" (the Mt Fuji of Ezo). Seen through the window frames, the scenery all looks like it was taken from finished paintings. It's so lovely to enjoy moments of luxury in this sophisticated place surrounded by nature.

Esashi Ryotei Kuki
It's said that a phenomenon called "kuki" has occurred many times in the sea of Esashi, in which a large amount of herring rush into the shallow water. This inn is located in a unique space, surrounded by stone walls near the sea. There are seven separate rooms, all with hot springs flowing directly from the source.
After you finish your bath, you can enjoy the view of the stone garden while you savor a drink and cool down on the balcony of your room. Payment within this inn is all-inclusive, so you can enjoy a wide variety of alcohols (excluding some) without the hassle of paying every time.
The inn aims for local production for local consumption; the inn has its own directly-managed farm, and all the chickens, Suffolk sheep, vegetables, and other ingredients used here are limited to those harvested and caught within 25 kilometers of the inn. For dinner, you'll find creative kaiseki dishes carefully prepared from locally produced ingredients.

Akan Tsuruga Besso Hinanoza
Lake Akan is renowned as a lake where Marimo moss balls (a national natural monument) grow; it is also a wetland registered under the Ramsar convention. Hinanoza is built on the shore of the lake, in a lush green environment within Akan Mashu National Park.
There are five types of rooms, all of which are suites; you can choose a room with lake or forest views. There is also a large communal bath which includes open-air baths and bedrock baths, overlooking splendid natural views. Kushiro City, where Lake Akan is located, has a thriving fishing industry, so you can enjoy fresh seafood as you dine.
Drinks in the hotel, including those offered at the bar, are largely (but not all) free, which is a nice bonus.

This auberge hotel limits the number of rooms to only six guest rooms to provide a superior standard of service. For dinner, you can choose from teppanyaki-style French cuisine and hearty kaiseki cuisine. It's very exciting to enjoy the spectacle of locally produced Shiraoi beef and seafood transformed into beautiful dishes in front of your eyes.
All of the guest rooms are suites, and you can enjoy both botanical hot springs and moor hot springs which are pumped from 1,345 meters underneath the premises. These are also called hot springs for beautiful skin, thanks to the alkaline spring quality. In fact, this hot spring water is potable, and each room has packaged spring water for drinking.
The Hokkaido rice used for breakfast is cooked in this fresh hot spring water and is popular for the sweetness it brings out in the rice. When you're in the mood for a spot of sightseeing, head to Upopoi (the National Ainu Museum), which opened in 2020 and is conveniently located only a 10-minute walk away.

MEMU EARTH HOTEL
MEMU EARTH HOTEL is perfect for travelers with an interest in state-of-the-art advanced buildings. The vast 18.5-hectare site was once a thoroughbred training center and is now dotted with the best works of famous architects such as Kengo Kuma in cold climate experimental housing and international university architectural competitions. Part of the site is used as accommodation.
You can enjoy unusual accommodation experiences in these buildings, which rise to challenges with innovative practices such as building with improved energy efficiency, and houses that use dry grass as outer wall materials (taking advantage of the characteristics of Taikicho, where the dairy industry is thriving). The ingredients used here come from the local Tokachi Subprefecture, which is a major agricultural area, and are carefully selected by the chef even down to their method of production.
